2 large red or yellow tomatoes, sliced
1/2 pound fresh mozzarella cheese, drained, sliced
1 bunch fresh basil leaves
3 tablespoons olive oil
2 tablespoons red wine or balsamic vinegar
Salt and pepper to taste
On a large platter, alternate and overlap the tomato slices, mozzarella cheese slices, and basil leaves. Drizzle with olive oil and vinegar. Season with salt and pepper to taste.
If you want to get real fancy, try using different varieties of heirloom tomatoes which come in many different shapes and colors.
Add slices of prosciutto.
Put it on a bun to make a veggie sandwich.
Sprinkle the plate with raspberries, blackberries, or blueberries.
