Cucumber salad

Salads are an excellent way to pump up your daily food with some essential and healthy nutrients; Salads can be prepared from everyday vegetables and are the easiest of all recipes.

Experts have recommended including at least one variety of salad daily. Since most salads have vegetables and other ingredients in their raw form, all the essential nutrients are preserved.
 
Ingredients

  3 large cucumbers,
  1/4 cup white sugar
  1/2 cup rice wine vinegar
  2 jalapeno peppers, chopped
  1/4 cup cilantro, chopped 2-3 tablespoons of fresh ginger, minced
  1/2 cup peanuts, chopped
  Salt and pepper to taste

Instructions

Slice cucumbers crosswise into very thin slices. Toss the cucumbers with the salt in a colander, and leave in the sink to drain for 30 minutes. Rinse with cold water, then drain and pat dry with paper towels.

Whisk together the sugar and vinegar in a mixing bowl until the sugar has dissolved. Add the cucumbers, jalapeno peppers, ginger, and cilantro; toss to combine. Sprinkle chopped peanuts on top before serving.

Serve it right after preparing because it can get soggy as the cucumbers give off water.

Fun Variations

Add some thinly sliced red onion.

Squeeze in some fresh Lime juice.

Add some shredded carrot for color.
