Cucumber sandwich

an English classic
England (UK)
The traditional cucumber sandwich is of British origin. Because of the cucumber's cooling nature, cucumber sandwiches are often eaten in the summer months or in warmer climates, such as in parts of India.

Cucumber sandwiches are most often served for a light snack or at afternoon tea. They‘re often served during breaks at club cricket matches. We’re not sure they’ll replace hot dogs at little league games, but give them a try.

1 (8 ounce) package cream cheese, softened
1/2 (.35 ounce) package dry Italian-style salad dressing mix
  1/2 cup mayonnaise
1 French baguette, cut into 1/2 inch thick circles
  1 cucumber, sliced
  Fresh dill weed, chopped

In a medium bowl, mix together cream cheese, dressing mix, and mayonnaise.

Spread a thin layer of the cream cheese mixture on a slice of bread, top with a slice of cucumber, and sprinkle with dill. Repeat with remaining ingredients.

Fun Variations

Use sour cream instead of mayonnaise or omit the mayo altogether.

Add a thin slice of Roma tomato.

Add some horseradish to the cream cheese to give it some kick.

Try using whipped cream cheese.
